One of Our Favorite Meals

This meal is somewhat time consuming, but it's worth it. Yum!

Cafe Rio Chicken

2.5 lbs. chicken breasts (boneless & skinless)
1/2 small bottle zesty Italian salad dressing
1/2 Tbs. chili powder
1/2 Tbs. cumin
2 cloves garlic, minced

Mix all ingredients together in a large crock pot. Cook on high for 4 hours. Remove chicken and shred. Reserve a small amount of juice and pour over shredded chicken. Keep warm.

Cafe Rio Lime Cilantro Rice
2 Tbs. butter
pepper to taste
1 1/4 cup rice
zest and juice from 1 large or 2 small limes
2 1/4 cups chicken broth
2 Tbs. chopped cilantro
3/4 tsp. salt
1/4 tsp. cumin

In a skillet, melt butter with rice. Add liquid and other ingredients. Bring to a boil, reduce heat, cover and cook for 20 minutes.

Tomatillo Dressing
1 pkg. Hidden Valley Buttermilk Ranch Dressing Mix
1 cup buttermilk
1 cup mayo
1 to 2 tomatillos
1 clove garlic, minced
1/3 bunch cilantro, chopped
1/2 tsp. lime juice
1/2 small jalapeno with seeds removed

Place all ingredients in a food processor and blend until smooth.

Layer ingredients in this order -
-tortillas
-cheese (we use pepper jack)
-shredded chicken
-black beans
-cilantro lime rice
-shredded green leaf lettuce
-crunchy corn tortilla strips
-fresh Parmesan cheese
-tomatillo dressing
Serve with pico de gallo and guacamole on the side.

Pico de Gallo
1 1/2 cup diced tomatoes
1 Tbs. fresh lemon juice
1/2 cup diced yellow onion
1 Tbs. fresh lime juice
1 Tbs. seeded and minced jalapeno pepper
1 Tbs. chopped fresh cilantro
2 tsp. minced garlic

Guacamole
2 avocados
1/2 lime, juiced
2 Tbs. chopped onion
1/2 tsp. salt
1 Tbs. cilantro
1 roma tomato, diced
1/2 tsp. minced garlic
Mash avocados and mix in all ingredients.

We had this for Alden's birthday and it was yummy. I don't usually like cilantro but the green tomatillo dressing was YUMMY!
